Revel in reeftop dining at The St. Regis Red Sea Resort

The Red Sea in Saudi Arabia is pulling out all the stops to be the must-visit destination in the region. While plenty of properties are expected to open in the coming months, The St. Regis Red Sea Resort is already welcoming guests to experience a unique island escape. Now, the resort has launched a unique “reeftop” dining experience that capitalises upon its moniker as the “Maldives of the Middle East.”

As part of the reeftop dining experience, you can indulge in a haute-cuisine degustation menu at Tilina. Crafted by Chef Thomas Colette, who honed his craft at Michelin-starred restaurants in Paris, each dish features flavours inspired by the Red Sea. Following themes, Shade of Sands and the Depth of the Sea – based on the season – every item on the menu reflects the marine life that exists in the region. The restaurant’s name is a nod to the Tellina shell, and the walls boast a beautiful shell-like pattern. Located above the reef, it offers panoramic views beyond the island. Plus, the open kitchen becomes a stage for culinary theatrics, adding an extra layer of entertainment perched high above the waves.

For those who like Japanese cuisine, Gishiki 45 tempts with its Omakase experience. With 80 seats, the refined space draws inspiration from modern izakaya venues and includes live music and entertainment. Led by Chef John Mark, diners can embark on a seven-course menu where each dish is created using the finest seasonal ingredients. Chef Mark will showcase his skills live at the table, preparing sashimi and seafood in front of your eye. And because Gishiki means ritual in Japanese, you can expect tableside service and Insta-worthy plating.

The St. Regis Red Sea Resort is located on the Ummahat Islands archipelago, which can be accessed by a chartered boat or seaplane. The high-end property boasts 90 overwater and beachfront villas, ranging from one to four bedrooms. Each villa boasts a private pool and sundeck, allowing you to bask in the glory of the Red Sea’s azure waters. The interiors pay homage to the surrounding natural landscape, with elements inspired by wind, water, and coral.
